![]() I would run the Ubuntu server headless using TeamViewer like I do now for Win-10. If I had to set up a new Plex server today, I would buy an i3 or i5 NUC install Ubuntu Linux 64-bit and run Plex for Ubuntu (64-bit). I built this server several years ago and the Shuttle has been a solid tank. If you want a little extra head-room go with an i5. I rarely do 2 streams, but in the times I've done it, the i3 had no problems. The i3 has no problems streaming/transcoding full bitrate BD rips with HD audio down to 4Mbps/720p/2.0 to fit the limited capabilities of the TiVo-Plex client in my TiVo Mini in the kitchen. I have the Plex transcoder quality setting at "make my CPU hurt" for maximum quality. I'm running Plex server under Win-10 on a headless Shuttle PC with an i3, 12GB RAM and 26TB disk farm (eSATA) - GigE backbone.
